Decadent Chocolate Lava Cakes

Individual rich chocolate cakes with gooey, molten centers. Perfect for a date night dessert.

Ingredients

100 g Dark chocolate
100 g Butter
2 whole Eggs
2 whole Egg yolks
50 g Caster sugar
25 g Gluten-free flour
15 g Cocoa powder
5 ml Vanilla extract
Sea salt
15 g Icing sugar

Preparation

  1. 1.Chop the dark chocolate into small, even pieces for faster melting
  2. 2.Measure out the butter and cut into cubes for easier melting
  3. 3.Separate the 2 whole eggs into whites and yolks, setting the whites aside for another use and combining the 2 whole egg yolks with the additional 2 egg yolks in a bowl
  4. 4.Sift the gluten-free flour and cocoa powder together into a separate bowl to remove any lumps
  5. 5.Measure out the caster sugar, vanilla extract, sea salt, and icing sugar

Instructions

  1. 1.Preheat your oven to 200°C and lightly butter two ramekins or small oven-safe moulds, then dust lightly with cocoa powder
  2. 2.Combine the chopped dark chocolate and cubed butter in a heatproof bowl set over a pan of gently simmering water, stirring occasionally until completely melted and smooth
  3. 3.Remove the chocolate and butter mixture from the heat and allow to cool slightly for about 2 minutes
  4. 4.Whisk the 4 egg yolks with the caster sugar using an electric mixer or whisk until pale, thick, and ribbon-like, approximately 3-4 minutes
  5. 5.Gently fold the cooled chocolate and butter mixture into the whisked egg and sugar mixture using a spatula, being careful not to deflate the mixture
  6. 6.Sift the gluten-free flour and cocoa powder mixture over the chocolate mixture and fold in gently until just combined
  7. 7.Stir in the vanilla extract and sea salt until fully incorporated
  8. 8.Divide the batter evenly between the two prepared ramekins, filling them about three-quarters full
  9. 9.Place the ramekins on a baking tray and bake in the preheated oven for 12-15 minutes, until the edges are set and firm but the centre still wobbles slightly when gently shaken
  10. 10.Remove from the oven and allow to rest for 1 minute, then carefully turn out onto serving plates or serve directly in the ramekins
  11. 11.Dust generously with icing sugar just before serving and serve immediately while still warm
