A creamy chicken dish cooked in a sun-dried tomato sauce with garlic, heavy cream, and parmesan cheese. It's perfect for a romantic dinner for two!
Ingredients
2 medium chicken breasts
2 tbsp olive oil
3 clove garlic cloves
75 g sun-dried tomatoes
150 ml heavy cream
120 ml chicken stock
50 g parmesan cheese
1 tsp dried oregano
½ tsp red pepper flakes
5 large fresh basil leaves
½ tsp salt
¼ tsp black pepper
Preparation Steps
- 1.Trim any excess fat from the chicken breasts and gently pound them to an even thickness using a meat mallet or rolling pin to ensure even cooking.
- 2.Peel and finely mince the garlic cloves.
- 3.Drain and slice the sun-dried tomatoes into thin strips.
- 4.Grate the parmesan cheese finely.
- 5.Pick the fresh basil leaves, wash them, and pat dry before slicing them into thin ribbons or leaving them whole for garnish.
- 6.Measure the heavy cream and chicken stock.
- 7.Combine the dried oregano, red pepper flakes, salt, and black pepper in a small dish.
Instructions
- 1.Heat a large skillet over medium heat and add the olive oil.
- 2.Season the chicken breasts on both sides with the prepared spice blend (oregano, red pepper flakes, salt, and black pepper).
- 3.Once the oil is hot, sear the chicken breasts in the skillet until golden brown on both sides but not fully cooked through, about 4-5 minutes per side. Remove them from the skillet and set aside.
- 4.Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
- 5.Add the sliced sun-dried tomatoes to the skillet and cook for another minute to slightly soften them.
- 6.Pour in the chicken stock, followed by the heavy cream, and stir well to combine.
- 7.Reduce the heat to low and let the sauce simmer for 3-4 minutes, allowing the flavours to meld together.
- 8.Stir in the grated parmesan cheese, ensuring it melts into the sauce smoothly.
- 9.Return the seared chicken breasts to the skillet, spooning the sauce over them. Cover and let them simmer in the sauce for about 10 minutes, or until the chicken is fully cooked through and tender.
- 10.Remove the skillet from heat and garnish with the sliced basil ribbons or whole basil leaves.
- 11.Serve the chicken hot with the creamy tomato sauce drizzled generously over the top, pairing it with your favourite side dish or crusty bread.
