
Cranberry White Chocolate Chip Cookies

Soft and chewy cookies filled with sweet white chocolate chips and tart dried cranberries — a festive favorite for the holidays.
Ingredients
100 g Butter
75 g Caster sugar
75 g Light brown sugar
1 whole Egg
5 ml Vanilla extract
150 g Plain flour
5 g Baking powder
2 g Salt
100 g White chocolate chips
75 g Dried cranberries
Preparation
- 1.Remove the butter from the refrigerator and allow it to soften to room temperature for approximately 10 minutes, ensuring it is pliable but not melted
- 2.Measure out the caster sugar and light brown sugar, breaking up any lumps in the brown sugar with the back of a spoon
- 3.Crack the egg into a small bowl and whisk lightly with a fork until the yolk and white are combined
- 4.Measure the vanilla extract using a 5 ml measuring spoon
- 5.Sift the plain flour, baking powder, and salt together into a separate bowl to remove any lumps and ensure even distribution of the leavening agent
- 6.Measure the white chocolate chips and dried cranberries, checking for any debris or stems in the cranberries
Instructions
- 1.In a large mixing bowl, cream together the softened butter, caster sugar, and light brown sugar using an electric mixer or wooden spoon until the mixture is light, fluffy, and pale in colour, approximately 3-4 minutes
- 2.Add the whisked egg to the butter and sugar mixture gradually whilst continuing to mix, ensuring each addition is fully incorporated before adding more
- 3.Stir in the vanilla extract until well combined throughout the mixture
- 4.Gently fold the sifted flour, baking powder, and salt into the wet ingredients using a spatula or wooden spoon, mixing until just combined and no dry flour remains visible
- 5.Fold in the white chocolate chips and dried cranberries until evenly distributed throughout the dough
- 6.Using a tablespoon or small ice cream scoop, drop rounded portions of dough onto a baking tray lined with baking parchment, spacing them approximately 5 cm apart to allow for spreading
- 7.Preheat your oven to 180°C and bake the cookies for 12 minutes until the edges are lightly golden brown but the centres remain soft and slightly underbaked
- 8.Remove the baking tray from the oven and allow the cookies to cool on the tray for 5 minutes before transferring them to a wire cooling rack to cool completely
