One-Pan Teriyaki Beef and Rice

A savory and satisfying one-pan meal featuring tender ground beef, fluffy rice, and crisp vegetables all simmered together in a sweet and tangy teriyaki sauce. Perfect for busy weeknights and ready in under 30 minutes.

Ingredients

300 g Ground beef
200 g Long grain rice
400 ml Beef stock
60 ml Soy sauce
30 ml Mirin
15 g Brown sugar
2 clove Garlic
1 tbsp Ginger
1 medium Bell pepper
150 g Broccoli florets
2 stalk Spring onions
Sesame seeds
15 ml Vegetable oil
Salt
Black pepper

Preparation

  1. 1.Mince the garlic cloves finely
  2. 2.Grate the ginger into small pieces
  3. 3.Dice the bell pepper into bite-sized chunks
  4. 4.Chop the broccoli florets into smaller pieces if needed
  5. 5.Slice the spring onions into thin rounds, keeping white and green parts separate
  6. 6.Measure out the beef stock, soy sauce, and mirin into a small bowl and set aside
  7. 7.Dissolve the brown sugar with the soy sauce and mirin mixture

Instructions

  1. 1.Heat the vegetable oil in a large pan or wok over medium-high heat
  2. 2.Add the minced garlic and grated ginger to the hot oil and stir-fry for 30 seconds until fragrant
  3. 3.Add the ground beef to the pan, breaking it up with a spoon as it cooks until browned, approximately 4-5 minutes
  4. 4.Stir in the diced bell pepper and the white parts of the spring onions, cooking for 2 minutes
  5. 5.Pour in the long grain rice and stir-fry with the beef and vegetables for 1-2 minutes to coat with oil
  6. 6.Pour the beef stock and teriyaki sauce mixture (soy sauce, mirin, and dissolved brown sugar) into the pan and stir well
  7. 7.Add the broccoli florets and bring the mixture to a simmer
  8. 8.Reduce the heat to medium-low, cover the pan with a lid, and simmer for 15 minutes until the rice is tender and the liquid is absorbed
  9. 9.Remove from heat and let stand covered for 2 minutes
  10. 10.Fluff the rice gently with a fork and adjust seasoning with salt and black pepper to taste
  11. 11.Garnish with the green parts of the spring onions and sesame seeds before serving
