Ingredients

50 g chia seeds
300 ml unsweetened almond milk
2 tbsp honey
1 tsp vanilla extract
150 g mixed berries
5 small mint leaves

Preparation Steps

  1. 1.Combine the chia seeds and almond milk in a bowl, stirring thoroughly to avoid clumps and ensure even distribution.
  2. 2.Drizzle the honey into the mixture, followed by the vanilla extract, mixing well to incorporate.
  3. 3.Wash and pat dry the mixed berries, especially if they are fresh. Set them aside.
  4. 4.Rinse the mint leaves gently under cold water to remove any possible residue and pat them dry with a kitchen towel.

Instructions

  1. 1.Pour the chia seed and almond milk mixture into a container or individual serving glasses and refrigerate for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and become pudding-like.
  2. 2.Once the pudding is set, layer the mixed berries on top for a vibrant and flavorful topping.
  3. 3.Garnish with the small mint leaves for a fresh and aromatic touch before serving.
